Description

Transform a simple sweet onion into an extraordinary dish with a touch of Cajun seasoning and the richness of vegan butter. Perfect for any gathering!


Ingredients

  • 1 large (15-ounce) sweet onion, peeled and ends trimmed off
  • 1 tablespoon vegan butter
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Cajun seasoning
  • 1/4 teaspoon salt (plus more to taste)
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon Old Bay seasoning (optional)
  • Finely diced parsley leaves for garnish (optional)

Instructions

  1. Hollow the onion by cutting a small cone-shaped hollow out of the top center.
  2. Lay out a large piece of aluminum foil to wrap the onion.
  3. Place the onion in the center and fill the hollowed center with vegan butter.
  4. Mix Cajun seasoning with olive oil and drizzle it into the hollow, seasoning with salt and any optional spices.
  5. Wrap the onion with the foil to seal in flavors.
  6. Place the foil-wrapped onion on a baking sheet in a preheated oven at 400°F (200°C) and bake for 50-60 minutes until fork-tender.
  7. Open the foil, drizzle additional melted butter or olive oil, and broil for 5-10 minutes until golden-brown.
  8. Serve warm, peeling layers of the onion to reveal the rich, juicy goodness.

Notes

You can prepare the onion ahead of time and store it in the fridge before baking. Experiment with different seasoning blends to customize your flavor.
