- 4 salmon fillets
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 ripe avocado
- 1 lime (juiced)
- 2 tablespoons Greek yogurt (or sour cream)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Drizzle the olive oil over the salmon and sprinkle with Cajun seasoning, salt, and pepper.
- Bake for 12-15 minutes or until the salmon flakes easily with a fork.
- Mash the avocado in a bowl and mix with lime juice, Greek yogurt, and salt until creamy.
- Remove the salmon from the oven and plate each fillet.
- Top with the creamy avocado lime sauce and garnish with cilantro.
Notes
Can prepare the avocado lime sauce a few hours in advance and refrigerate it.
