- 1.5 lbs (700 g) baby potatoes, halved
- 200 g (7 oz) block feta cheese
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup (150 g) cherry tomatoes, halved
- 1/4 cup (35 g) pitted Kalamata olives (optional)
- Fresh basil or parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- In a large bowl, toss the halved potatoes with olive oil, oregano, garlic powder, salt, and black pepper.
- Spread the seasoned potatoes in a single layer on the baking sheet, place the feta in the center, and scatter the cherry tomatoes and olives around.
- Bake for 25-30 minutes until the potatoes are tender and golden brown.
- Use a fork to mash the feta into the potatoes and tomatoes, creating a creamy sauce.
- Garnish with fresh basil or parsley and serve warm.
Notes
Make ahead and store in the fridge. Can also be cooked in an air fryer at 380°F (193°C) for about 20 minutes.
