Description

A comforting and flavorful Mediterranean-inspired dish featuring roasted baby potatoes and creamy baked feta cheese, perfect for gatherings.


Ingredients

  • 1.5 lbs (700 g) baby potatoes, halved
  • 200 g (7 oz) block feta cheese
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup (150 g) cherry tomatoes, halved
  • 1/4 cup (35 g) pitted Kalamata olives (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, toss the halved potatoes with olive oil, oregano, garlic powder, salt, and black pepper.
  4. Spread the seasoned potatoes in a single layer on the baking sheet, place the feta in the center, and scatter the cherry tomatoes and olives around.
  5. Bake for 25-30 minutes until the potatoes are tender and golden brown.
  6. Use a fork to mash the feta into the potatoes and tomatoes, creating a creamy sauce.
  7. Garnish with fresh basil or parsley and serve warm.

Notes

Make ahead and store in the fridge. Can also be cooked in an air fryer at 380°F (193°C) for about 20 minutes.
