- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (optional)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste

Instructions
- Preheat your oven to 425°F (220°C).
- Slice the zucchini into thin rounds, about ¼ inch thick.
- In a bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper until well combined.
- Dip each zucchini slice in olive oil, then coat with the Parmesan mixture.
- Place coated zucchini slices on a baking sheet lined with parchment paper in a single layer.
- Bake for 15-20 minutes, until golden and crispy.
- Remove from the oven, garnish with fresh herbs if desired, and serve hot.
Notes
Make ahead by coating the zucchini and refrigerating for up to 2 hours before baking. Can be cooked in an air fryer at 400°F for 10-12 minutes.
