Description

Deliciously crispy baked zucchini coated in Parmesan, perfect as a side dish or snack.


Ingredients

  • 2 medium zucchini
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs (like parsley or basil) for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchini into thin rounds, about ¼ inch thick.
  3. In a bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper until well combined.
  4. Dip each zucchini slice in olive oil, then coat with the Parmesan mixture.
  5. Place coated zucchini slices on a baking sheet lined with parchment paper in a single layer.
  6. Bake for 15-20 minutes, until golden and crispy.
  7. Remove from the oven, garnish with fresh herbs if desired, and serve hot.

Notes

Make ahead by coating the zucchini and refrigerating for up to 2 hours before baking. Can be cooked in an air fryer at 400°F for 10-12 minutes.
