- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 medium sweet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt

- 1 cup cooked quinoa
- 1/2 cup BBQ sauce
- 1/2 cup corn kernels
- 1/2 cup black beans, drained and rinsed
- 1/4 cup chopped cilantro
- 1/4 cup sliced green onions
- 1/2 cup crumbled feta cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes into small 1-inch pieces. Spread on a parchment-lined baking sheet, drenching them in olive oil and seasoning with salt and pepper. Roast for 25-30 minutes, flipping halfway.
- Coat the chicken breasts with olive oil and rub with the spice mixture.
- Heat a skillet over medium heat, add chicken, and cook for 6-7 minutes per side or until cooked through. Set aside and slice.
- Prepare the quinoa according to package instructions.
- Mix cooked quinoa, corn, black beans, and sweet potatoes in a large bowl. Lay sliced chicken on top, drizzle with warmed BBQ sauce, and toss gently.
- Top with cilantro, green onions, and feta cheese if using. Serve warm or at room temperature.
