Description

A vibrant and hearty meal featuring tender BBQ chicken, roasted sweet potatoes, and fresh toppings.


Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 cup BBQ sauce
  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 avocado, sliced
  • 1 cup corn (fresh, canned, or frozen)
  • 1 cup slaw (cabbage, carrots, etc.)
  • Extra BBQ sauce for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by peeling and cubing them. Toss with olive oil, salt, and pepper, then spread on a baking sheet.
  3. Roast the sweet potatoes for 25-30 minutes until tender and caramelized.
  4. Cook the chicken by grilling or baking until it reaches an internal temperature of 165°F, brushing with BBQ sauce during the last few minutes.
  5. Rest the chicken for a few minutes before slicing.
  6. Assemble the bowls with roasted sweet potatoes, sliced BBQ chicken, avocado, corn, and slaw. Drizzle with extra BBQ sauce.
  7. Serve and enjoy!
