- 2 chicken breasts, boneless and skinless
- 1 cup BBQ sauce
- 2 large sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 avocado, sliced
- 1 cup corn (fresh, canned, or frozen)
- 1 cup slaw (cabbage, carrots, etc.)
- Extra BBQ sauce for drizzling
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the sweet potatoes by peeling and cubing them. Toss with olive oil, salt, and pepper, then spread on a baking sheet.
- Roast the sweet potatoes for 25-30 minutes until tender and caramelized.
- Cook the chicken by grilling or baking until it reaches an internal temperature of 165°F, brushing with BBQ sauce during the last few minutes.
- Rest the chicken for a few minutes before slicing.
- Assemble the bowls with roasted sweet potatoes, sliced BBQ chicken, avocado, corn, and slaw. Drizzle with extra BBQ sauce.
