A comforting one-pan meal of tender chicken and caramelized sweet potatoes drizzled in BBQ sauce, perfect for busy weeknight dinners.

- 2 medium sweet potatoes, peeled and diced
- 2 cups cooked chicken, shredded or diced
- 1 cup BBQ sauce
- 1 red onion, chopped
- 1 cup corn (fresh or frozen)
- 1 cup cheddar cheese, shredded
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 teaspoon smoked paprika
- 2 green onions, chopped
Instructions
- Heat olive oil in a heavy-cast iron skillet over medium heat. Add the sweet potatoes with salt, pepper, and smoked paprika; cook for 10–15 minutes until tender and golden brown.
- Add the chopped red onion and corn, sautéing until onions are translucent, about 3–4 minutes.
- Reduce heat to low, add the shredded chicken and BBQ sauce, stirring to combine, and simmer for about 5 minutes.
- Sprinkle cheddar cheese on top, cover, and let it melt for a few minutes. Finish with chopped green onions and serve warm.
Notes
For a vegetarian option, replace chicken with black beans or chickpeas. Prepping sweet potatoes and chicken in advance can save time.
