Description

A comforting one-pan meal of tender chicken and caramelized sweet potatoes drizzled in BBQ sauce, perfect for busy weeknight dinners.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 2 cups cooked chicken, shredded or diced
  • 1 cup BBQ sauce
  • 1 red onion, chopped
  • 1 cup corn (fresh or frozen)
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon smoked paprika
  • 2 green onions, chopped

Instructions

  1. Heat olive oil in a heavy-cast iron skillet over medium heat. Add the sweet potatoes with salt, pepper, and smoked paprika; cook for 10–15 minutes until tender and golden brown.
  2. Add the chopped red onion and corn, sautéing until onions are translucent, about 3–4 minutes.
  3. Reduce heat to low, add the shredded chicken and BBQ sauce, stirring to combine, and simmer for about 5 minutes.
  4. Sprinkle cheddar cheese on top, cover, and let it melt for a few minutes. Finish with chopped green onions and serve warm.

Notes

For a vegetarian option, replace chicken with black beans or chickpeas. Prepping sweet potatoes and chicken in advance can save time.
