- 2 lbs Pork Shoulder
- 2 large Sweet Potatoes
- 1 cup BBQ Sauce
- 2 tablespoons Olive Oil
- Salt & Pepper, to taste
- Optional Toppings: Green onions, cilantro, avocado, sour cream
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare sweet potatoes by peeling and chopping them into bite-sized cubes. Toss with olive oil, salt, and pepper, then spread evenly on a baking sheet.
- Roast sweet potatoes in the oven for 25-30 minutes until tender and golden.
- Season the pork shoulder generously with salt and pepper.
- Place the pork in a slow cooker and slather with BBQ sauce. Cover and cook on low for 8 hours or high for 4 hours.
- Shred the pork once cooked, mixing in more BBQ sauce if desired.
- Assemble bowls with a base of roasted sweet potatoes topped with pulled pork and optional garnishes, and serve warm.
Notes
Make ahead by preparing the pork a day in advance for easier reheating. Customize with toppings to suit your taste.
