Description

A satisfying bowl brimming with smoky pulled pork and sweet roasted potatoes, perfect for any occasion.


Ingredients

Scale
  • 2 lbs Pork Shoulder
  • 2 large Sweet Potatoes
  • 1 cup BBQ Sauce
  • 2 tablespoons Olive Oil
  • Salt & Pepper, to taste
  • Optional Toppings: Green onions, cilantro, avocado, sour cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare sweet potatoes by peeling and chopping them into bite-sized cubes. Toss with olive oil, salt, and pepper, then spread evenly on a baking sheet.
  3. Roast sweet potatoes in the oven for 25-30 minutes until tender and golden.
  4. Season the pork shoulder generously with salt and pepper.
  5. Place the pork in a slow cooker and slather with BBQ sauce. Cover and cook on low for 8 hours or high for 4 hours.
  6. Shred the pork once cooked, mixing in more BBQ sauce if desired.
  7. Assemble bowls with a base of roasted sweet potatoes topped with pulled pork and optional garnishes, and serve warm.

Notes

Make ahead by preparing the pork a day in advance for easier reheating. Customize with toppings to suit your taste.
