Description

A comforting and hearty stew made with black-eyed peas, vegetables, and aromatic spices, perfect for any occasion.


Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 large sweet onion, diced small
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 medium potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes with juice
  • 3 garlic cloves, minced
  • 2 cups cooked black-eyed peas, drained and rinsed
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt, or to taste
  • 2 tablespoons chopped fresh parsley, plus additional for garnish

Instructions

  1. In a large pot, pour in the olive oil and let it warm over medium heat.
  2. Add diced sweet onion and sauté for about 3-4 minutes until translucent.
  3. Stir in diced carrots and celery, cooking for another 4 minutes.
  4. Toss in the diced potatoes and sauté for 2 minutes.
  5. Mix in minced garlic and stir for 1 minute.
  6. Pour in the diced tomatoes and vegetable broth, stirring everything together.
  7. Add bay leaf, thyme, smoked paprika, black pepper, and salt, ensuring everything is well combined.
  8. Bring to a gentle boil, reduce heat and simmer uncovered for about 15 minutes.
  9. Stir in the black-eyed peas and simmer for another 10 minutes.
  10. Remove the bay leaf, taste, and adjust seasoning as needed. Stir in chopped parsley.
  11. Ladle into bowls and garnish with additional fresh parsley.

Notes
