Description

A delightful homemade ice cream with a vibrant blue color and a sweet, tangy flavor profile that combines vanilla and raspberry.


Ingredients

  • 1 cup whole milk
  • 1 ½ cups heavy whipping cream
  • ½ cup sugar
  • 3 teaspoons vanilla pudding mix
  • 1 teaspoon vanilla extract
  • 1 teaspoon raspberry extract or 1 cup raspberries
  • 1 teaspoon lemon extract
  • ¼ teaspoon salt
  • ½ teaspoon blue food coloring

Instructions

  1. Heat the Milk: Pour 1 cup of whole milk into a medium saucepan over medium heat. Warm it gently until it reaches boiling point, stirring occasionally to avoid scorching.
  2. Add Sugar and Salt: Once steaming, incorporate ½ cup of sugar and ¼ teaspoon of salt. Stir until completely dissolved.
  3. Mix in Cream and Flavors: Remove from heat and blend in 1 ½ cups heavy whipping cream, 1 teaspoon vanilla extract, 3 teaspoons vanilla pudding mix, 1 teaspoon raspberry extract (or muddled raspberries), and 1 teaspoon lemon extract. Mix thoroughly.
  4. Achieve Blue Perfection: Add the ½ teaspoon blue food coloring, stirring until you reach the desired vibrant hue.
  5. Chill the Mixture: Transfer to a deep mixing bowl, cover with plastic wrap, and refrigerate until chilled (at least 2 hours or overnight).
  6. Churn the Ice Cream: Pour the mixture into your ice cream maker and churn as per the manufacturer’s instructions.
