- 4 medium potatoes (russet or Yukon gold)
- 4 large eggs
- 4 strips of bacon
- 1 medium onion (sweet or yellow)
- 1 bell pepper (any color)
- 2 tablespoons olive oil

Instructions
- Dice the potatoes into bite-sized pieces. In a large cast-iron skillet, heat olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Sauté for about 10-15 minutes until golden brown and crispy.
- Add diced onion and bell pepper to the skillet. Cook for another 5-7 minutes until softened.
- In the same skillet, cook the bacon until crispy, then chop it into pieces and mix with the potato-vegetable mixture.
- Create wells in the hash and crack an egg into each. Cover and let cook for 3-5 minutes until whites are set and yolks are runny.
- Season again with salt and pepper as needed. Serve hot.
