- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 egg yolk
- 2 tsp vanilla extract
- 2¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 2 tsp ground cinnamon
- ¼ cup granulated sugar (for cinnamon swirl)
- Coarse sugar or cinnamon sugar (for rolling, optional)
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy, about 2 to 3 minutes.
- Add the egg, egg yolk, and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually combine the dry ingredients with the wet mixture, stirring just until no flour is visible.
- Use a cookie scoop to portion out the dough into two-tablespoon balls and optionally roll each in coarse sugar.
- Place the dough balls on the prepared baking sheet, spaced 2½ inches apart.
- Mix granulated sugar with cinnamon, create an indentation in each cookie with your thumb, and sprinkle the cinnamon sugar mixture inside.
- Bake for 9 to 11 minutes until edges are set but centers remain soft.
- Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
Chill the dough for 30 minutes if it seems too warm to help prevent spreading during baking. Optionally add chocolate chips or nuts for personalization.
