Description

A vibrant dish of tender chicken and colorful bell peppers seasoned with Cajun spices, perfect for weeknight dinners or festive gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 bell peppers (red, green, or yellow), sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil (for sautéing)
  • Fresh parsley or cilantro, chopped (optional)

Instructions

  1. In a small bowl, mix together Cajun seasoning, garlic powder, onion powder, paprika, thyme, salt, and pepper. Rub this blend evenly over the chicken breasts.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F. Remove and let it rest.
  3. In the same skillet, add 1 tablespoon of olive oil and sauté the sliced bell peppers and onions over medium heat for 5-6 minutes until softened. Add minced garlic and sauté for another 1-2 minutes.
  4. Slice the cooked chicken and return it to the skillet with the vegetables, tossing everything together for 2-3 minutes.
  5. Garnish with chopped parsley or cilantro and serve hot.

Notes

For extra flavor, marinate the chicken overnight in the spice blend. You can serve this dish over rice or in wraps for more variety.
