Description

A wholesome, energizing snack made with dried cherries, cranberries, rolled oats, and almond butter, perfect for a boost of energy.


Ingredients

  • 1 cup dried cherries
  • 1 cup dried cranberries
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large bowl, combine the dried cherries, dried cranberries, rolled oats, almond butter, honey (or maple syrup), chia seeds, vanilla extract, and a pinch of salt. Stir until every ingredient is well incorporated; the mixture should be sticky and cohesive.
  2. With clean hands, grab small portions of the mixture and roll them into balls about 1 inch in diameter.
  3. Line a baking sheet with parchment paper and place the energy bites on it, carefully spaced apart. Chill in the refrigerator for at least 30 minutes to allow them to set.
  4. Once set, transfer the energy bites to an airtight container. They will keep well in the fridge for up to one week.

Notes

You can make a double batch and store them in individual bags for the week ahead. Optionally, use an air fryer for a slight caramelization on the bites.
