A wholesome, energizing snack made with dried cherries, cranberries, rolled oats, and almond butter, perfect for a boost of energy.
Ingredients

- 1 cup dried cherries
- 1 cup dried cranberries
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup chia seeds
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a large bowl, combine the dried cherries, dried cranberries, rolled oats, almond butter, honey (or maple syrup), chia seeds, vanilla extract, and a pinch of salt. Stir until every ingredient is well incorporated; the mixture should be sticky and cohesive.
- With clean hands, grab small portions of the mixture and roll them into balls about 1 inch in diameter.
- Line a baking sheet with parchment paper and place the energy bites on it, carefully spaced apart. Chill in the refrigerator for at least 30 minutes to allow them to set.
- Once set, transfer the energy bites to an airtight container. They will keep well in the fridge for up to one week.
Notes
You can make a double batch and store them in individual bags for the week ahead. Optionally, use an air fryer for a slight caramelization on the bites.
