Description

A wholesome Chicken and Sweet Potato Bowl that combines roasted sweet potatoes, juicy chicken, and fresh greens for a nutritious and satisfying meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh greens (spinach or kale)
  • Optional toppings (avocado, nuts, or seeds)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drizzle 1 tablespoon of olive oil over the cubed sweet potatoes, then sprinkle with garlic powder, paprika, salt, and pepper. Toss well.
  3. Roast the sweet potatoes for about 25-30 minutes, flipping halfway through.
  4. Heat the remaining olive oil in a skillet over medium heat.
  5. Season the chicken breasts with salt and pepper and cook in the skillet for 6-7 minutes on each side.
  6. Remove the chicken from the skillet and let it rest for a few minutes.
  7. Layer fresh greens in bowls, followed by roasted sweet potatoes and sliced chicken.
  8. Top with optional toppings of your choice.
