- 2 boneless, skinless chicken breasts
- 2 medium sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh greens (spinach or kale)
- Optional toppings (avocado, nuts, or seeds)
Instructions
- Preheat your oven to 400°F (200°C).
- Drizzle 1 tablespoon of olive oil over the cubed sweet potatoes, then sprinkle with garlic powder, paprika, salt, and pepper. Toss well.
- Roast the sweet potatoes for about 25-30 minutes, flipping halfway through.
- Heat the remaining olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper and cook in the skillet for 6-7 minutes on each side.
- Remove the chicken from the skillet and let it rest for a few minutes.
- Layer fresh greens in bowls, followed by roasted sweet potatoes and sliced chicken.
