- 2 chicken breasts, cubed
- 2 sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste

Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper in a mixing bowl until well-coated.
- Spread the seasoned sweet potatoes on a baking sheet in a single layer and roast for 20-25 minutes, stirring halfway through.
- While the sweet potatoes roast, heat the remaining olive oil in a skillet over medium heat.
- Add the cubed chicken breast to the skillet, seasoning it with salt and pepper. Cook for 7-10 minutes until golden and cooked through.
- Combine the roasted sweet potatoes with the cooked chicken in serving bowls.
- Garnish with finely chopped fresh parsley.
