Description

A wholesome dish featuring tender chicken and caramelized sweet potatoes, seasoned to perfection for a comforting meal.


Ingredients

  • 2 chicken breasts, cubed
  • 2 sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper in a mixing bowl until well-coated.
  3. Spread the seasoned sweet potatoes on a baking sheet in a single layer and roast for 20-25 minutes, stirring halfway through.
  4. While the sweet potatoes roast, heat the remaining olive oil in a skillet over medium heat.
  5. Add the cubed chicken breast to the skillet, seasoning it with salt and pepper. Cook for 7-10 minutes until golden and cooked through.
  6. Combine the roasted sweet potatoes with the cooked chicken in serving bowls.
  7. Garnish with finely chopped fresh parsley.
  8. Serve warm and enjoy!

Notes

Prep your sweet potatoes a day in advance for quick cooking. Experiment with spices for added flavor.
