Description

A comforting and flavorful Chicken Zucchini Bake featuring tender chicken, vibrant vegetables, and melted cheese, perfect for family dinners.


Ingredients

  • 2 lbs boneless, skinless chicken breasts, cubed
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed chicken breasts, cooking until golden brown on all sides, about 5-7 minutes.
  3. Mix vegetables: In a mixing bowl, combine sliced zucchinis, diced bell peppers, garlic powder, onion powder, oregano, basil, salt, and pepper. Drizzle with remaining olive oil and toss until well-coated.
  4. Layer the dish: Arrange half of the vegetable mixture at the bottom of a baking dish.
  5. Add chicken and sauce: Layer the browned chicken evenly over the vegetables, followed by marinara sauce.
  6. Top with the remaining vegetable mixture.
  7. Cheesy goodness: Sprinkle with shredded mozzarella and grated parmesan.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly and golden.
  9. Serve and enjoy after cooling for about 5 minutes.
