Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium zucchini, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the zucchini into bite-sized pieces for even cooking.
  3. In a large oven-safe skillet, heat olive oil over medium heat.
  4. Add minced garlic and sauté for about 30 seconds.
  5. Add the chicken breasts, season with Italian seasoning, salt, and pepper, and sear for 5-7 minutes on each side until golden brown.
  6. Add zucchini around the chicken in the skillet.
  7. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
