Description

Delightful cookies with a soft, chewy texture and a luscious strawberry center, coated in rich chocolate.


Ingredients

  • 1 cup Unsalted Butter
  • 1 cup Light Brown Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • ½ cup Dutch-Processed Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ¼ teaspoon Salt
  • 1 cup Freeze-Dried Strawberries
  • 1 cup Semisweet Chocolate Chips (for dough)
  • 2 tablespoons Coconut Oil (for melting chocolate)
  • 1 cup Semisweet Chocolate Chips (for coating)
  • 1 tablespoon Coconut Oil (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together unsalted butter and light brown sugar until fluffy.
  3. Add the egg and vanilla extract, mixing until just combined.
  4. In another bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in freeze-dried strawberries and chocolate chips.
  7. Using a cookie scoop, place dough on prepared baking sheets, spaced 2 inches apart.
  8. Bake for 10-12 minutes until edges are set and centers are gooey.
  9. Let cool on sheets for 15 minutes, then transfer to a cooling rack.
  10. Melt chocolate chips and coconut oil for coating, dip cookie bottoms in melted chocolate, and allow to set on parchment paper.

Notes

You can prepare the dough ahead of time and refrigerate for up to three days. Optional: customize with nuts or different chocolate chips.
