- 4 cod fillets (about 5.3 oz each), skinless and boneless
- 1 tablespoon neutral oil (canola or sunflower)
- 1 onion, finely sliced
- 2 garlic cloves, minced
- 1 tablespoon ginger, grated
- 1 red chili, thinly sliced (optional)
- 1 tablespoon red curry paste
- 1¾ cups coconut milk
- 2 cups fish or vegetable stock
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- Juice of 1 lime
- 10.6 oz fresh udon noodles
- 5.3 oz baby spinach
- 1 medium carrot, julienned
- 3.5 oz shiitake mushrooms, sliced
- 2 spring onions, thinly sliced
- Fresh coriander leaves for garnish
Instructions
- Heat the neutral oil in a large saucepan over medium heat. Add the sliced onion and sauté for about three minutes until softened and translucent. Stir in the minced garlic, grated ginger, and sliced chili, cooking for another minute until fragrant.
- Stir in the red curry paste and cook for one minute while stirring constantly.
- Pour in the coconut milk followed by the fish or vegetable stock. Bring to a gentle simmer while stirring occasionally.
- Once simmering, add the fish sauce, soy sauce, and lime juice. Adjust seasoning to taste.
- Gently slide the cod fillets into the broth. Cover and poach for about 6 to 8 minutes, until cod is opaque and flakes easily.
- Prepare the udon noodles according to package instructions. Drain and divide into four bowls.
- Add spinach, julienned carrots, and sliced shiitake mushrooms into the broth, simmering for an additional 2 to 3 minutes.
- Remove poached cod from the broth and ladle the hot broth and vegetables over the noodles in each bowl.
- Place a poached cod fillet atop each bowl, garnish with sliced spring onions and fresh coriander, and serve immediately.
Notes
Make ahead: Prepare the broth a day in advance and reheat when ready to serve. Customize by adding favorite vegetables or replacing cod with tofu for a vegan option.
