Description

A delightful mix of flavors with tender chicken, creamy Cowboy Butter sauce, and zesty lemon over bowtie pasta and broccoli.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon Dijon mustard
  • Juice and zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 2 cups broccoli florets
  • 12 ounces bowtie (farfalle) pasta
  • 1/2 cup reserved pasta water
  • 1/2 cup grated Parmesan cheese, plus extra for topping

Instructions

  1. Cook the bowtie pasta: Bring a pot of salted water to a boil. Add pasta and cook according to package instructions, adding broccoli florets in the last 2-3 minutes. Drain and reserve 1/2 cup pasta water.
  2. Sear the chicken: In a large skillet, heat olive oil over medium-high heat. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Cook chicken until golden brown and cooked through, about 5-7 minutes per side. Remove from skillet.
  3. Create the sauce: In the same skillet, melt butter over medium heat. Add minced garlic and crushed red pepper flakes. Sauté for about 1 minute, then stir in Dijon mustard, lemon juice, and zest. Simmer for 1-2 minutes.
  4. Combine: Return chicken to skillet, then add cooked pasta and broccoli. Toss everything together, adding reserved pasta water gradually until the sauce clings to everything.
  5. Finish: Stir in grated Parmesan, parsley, and chives. Serve immediately, garnished with extra Parmesan.

Notes

Make-ahead by preparing chicken and sauce a day early. Optional: Use an air fryer for quicker cooking.
