Description

A cozy and delicious Cowboy Casserole with layers of seasoned beef, creamy mushroom sauce, and crispy tater tots.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) corn, drained
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 bag (32 oz) frozen tater tots
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until thoroughly browned, breaking it up as it cooks.
  3. Drain any excess fat.
  4. Add cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper to the skillet and stir until blended.
  5. Grease a baking dish and spread the beef mixture evenly across the bottom.
  6. Layer the drained corn on top, followed by a sprinkle of shredded cheese.
  7. Arrange tater tots over the cheese layer to cover it completely.
  8. Bake for 30-35 minutes until tater tots are golden brown.
  9. Let it cool for a few minutes before serving.

Notes

For a lighter version, swap ground beef for turkey or chicken. Customize with bell peppers or jalapeños.
