Ingredients

- 4 cups sweet corn (fresh or frozen)
- 6 strips of bacon, cooked and crumbled
- 1 cup cheddar cheese, shredded
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- In a large bowl, combine the sweet corn, crumbled bacon, and shredded cheddar cheese. Mix gently.
- In a separate bowl, mix together the mayonnaise, sour cream, lemon juice, garlic powder, and salt and pepper until smooth.
- Pour the dressing over the corn mixture and stir until well coated without over-mixing.
- Garnish with chopped green onions before serving.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
Notes
Prepare the salad a day in advance for deeper flavors. Optional ingredients include diced bell peppers or chopped tomatoes.
