Description

A rich and creamy dessert that combines tangy lemon and sweet blueberries for a refreshing treat.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipped cream
  • 1 cup blueberries
  • 1/4 cup sugar (for topping)
  • 1 tablespoon lemon zest (for topping)
  • Graham cracker crust (optional)

Instructions

  1. In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  2. Add lemon juice and vanilla extract; mix until thoroughly combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture with a spatula.
  5. If using a graham cracker crust, pour the cream cheese mixture into it; otherwise, layer it in a serving dish.
  6. In a saucepan over medium heat, combine blueberries and sugar; cook until the blueberries start to burst.
  7. Remove from heat and stir in lemon zest.
  8. Generously pour blueberry topping over the cream cheese mixture and chill in the refrigerator for at least 2 hours.

Notes

Best served chilled; makes a great make-ahead dessert. Can be customized with different berries or lemon curd.
