- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract
- 1 cup heavy whipped cream
- 1 cup blueberries
- 1/4 cup sugar (for topping)
- 1 tablespoon lemon zest (for topping)
- Graham cracker crust (optional)
Instructions
- In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
- Add lemon juice and vanilla extract; mix until thoroughly combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture with a spatula.
- If using a graham cracker crust, pour the cream cheese mixture into it; otherwise, layer it in a serving dish.
- In a saucepan over medium heat, combine blueberries and sugar; cook until the blueberries start to burst.
- Remove from heat and stir in lemon zest.
- Generously pour blueberry topping over the cream cheese mixture and chill in the refrigerator for at least 2 hours.
Notes
Best served chilled; makes a great make-ahead dessert. Can be customized with different berries or lemon curd.
