Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup cottage cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded cheese (optional)
  • Cooking oil for frying

Instructions

  1. In a bowl, mix the shredded chicken, cottage cheese, garlic powder, onion powder, paprika, salt, and black pepper until well combined.
  2. Heat a skillet over medium heat and add a little cooking oil.
  3. Take a corn tortilla and fill it with the chicken and cottage cheese mixture.
  4. Fold the tortilla in half and place it in the skillet.
  5. Cook for about 3-4 minutes on each side until the edges are crispy and golden brown.
  6. Remove from the skillet and repeat with the remaining tortillas.
  7. Serve the tacos topped with shredded lettuce, diced tomatoes, chopped cilantro, and shredded cheese if desired.
