- 1 tablespoon butter
- 1/2 onion, chopped
- 2 cloves garlic
- 4 cups chicken bone broth
- 8 oz cream cheese
- 1 lb Italian sausage (mild or hot)
- 1 can (14 oz) diced tomatoes
- 1 small zucchini, chopped
- 2 cups chopped spinach
- Seasonings: dried basil, oregano, bay leaf, cayenne pepper
Instructions
- Melt the butter in a large pot on medium-high heat until it shimmers.
- Cook the chopped onion and minced garlic until the onion softens, about 5 minutes.
- Brown the Italian sausage in the pot until thoroughly cooked.
- Introduce three cups of chicken bone broth, chopped zucchini, diced tomatoes, dried basil, oregano, bay leaf, and cayenne pepper. Bring to a boil and then let simmer.
- Blend the remaining cup of broth with the cream cheese until smooth, then stir it into the soup.
- Add the chopped spinach and allow it to wilt gently before serving.
Notes
This soup can be made ahead of time for better flavor. It can also be cooked in a slow cooker or Instant Pot.
