Description

A delightful bowl of Creamy Keto Italian Sausage Soup that combines the rich flavors of Italian sausage, cream cheese, and fresh vegetables.


Ingredients

  • 1 tablespoon butter
  • 1/2 onion, chopped
  • 2 cloves garlic
  • 4 cups chicken bone broth
  • 8 oz cream cheese
  • 1 lb Italian sausage (mild or hot)
  • 1 can (14 oz) diced tomatoes
  • 1 small zucchini, chopped
  • 2 cups chopped spinach
  • Seasonings: dried basil, oregano, bay leaf, cayenne pepper

Instructions

  1. Melt the butter in a large pot on medium-high heat until it shimmers.
  2. Cook the chopped onion and minced garlic until the onion softens, about 5 minutes.
  3. Brown the Italian sausage in the pot until thoroughly cooked.
  4. Introduce three cups of chicken bone broth, chopped zucchini, diced tomatoes, dried basil, oregano, bay leaf, and cayenne pepper. Bring to a boil and then let simmer.
  5. Blend the remaining cup of broth with the cream cheese until smooth, then stir it into the soup.
  6. Add the chopped spinach and allow it to wilt gently before serving.

Notes

This soup can be made ahead of time for better flavor. It can also be cooked in a slow cooker or Instant Pot.
