Deliciously crispy zucchini fritters that are easy to make and perfect for a variety of occasions.

- 2 medium zucchini, grated
- 1/2 tsp salt
- 1/2 cup almond flour
- 1/4 cup nutritional yeast
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp black pepper
- 1 tbsp olive oil (for frying or baking)
Instructions
- Grate the zucchini using a box grater or food processor and squeeze out excess moisture using a kitchen towel.
- In a large mixing bowl, combine the drained zucchini with salt, almond flour, nutritional yeast, garlic powder, onion powder, and black pepper, stirring until mixed well.
- Heat olive oil in a skillet over medium heat until shimmering, or preheat air fryer to 375°F (190°C).
- Shape the mixture into small patties (about two inches in diameter).
- Cook each patty in the skillet for 3-4 minutes on each side until golden brown, or air-fry for 10-12 minutes, flipping halfway through.
- Serve warm with tzatziki sauce or lemon yogurt.
Notes
Make-ahead: Prepare the mixture a day in advance and refrigerate it. Bake for a lighter option at 400°F (200°C) for 20 minutes.
