Description

Deliciously crispy zucchini fritters that are easy to make and perfect for a variety of occasions.


Ingredients

  • 2 medium zucchini, grated
  • 1/2 tsp salt
  • 1/2 cup almond flour
  • 1/4 cup nutritional yeast
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for frying or baking)

Instructions

  1. Grate the zucchini using a box grater or food processor and squeeze out excess moisture using a kitchen towel.
  2. In a large mixing bowl, combine the drained zucchini with salt, almond flour, nutritional yeast, garlic powder, onion powder, and black pepper, stirring until mixed well.
  3. Heat olive oil in a skillet over medium heat until shimmering, or preheat air fryer to 375°F (190°C).
  4. Shape the mixture into small patties (about two inches in diameter).
  5. Cook each patty in the skillet for 3-4 minutes on each side until golden brown, or air-fry for 10-12 minutes, flipping halfway through.
  6. Serve warm with tzatziki sauce or lemon yogurt.

Notes

Make-ahead: Prepare the mixture a day in advance and refrigerate it. Bake for a lighter option at 400°F (200°C) for 20 minutes.
