Description

A refreshing and vibrant Cucumber Pasta Salad that perfectly captures the essence of summer with its crisp vegetables and creamy feta.

Ingredients

Scale
  • 8 oz pasta (e.g., rotini or penne)
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to boil. Add your pasta and cook according to package instructions until al dente. Drain the pasta and let it cool completely.
  2. Combine Ingredients: In a spacious mixing bowl, toss together the cooled pasta, cucumber, cherry tomatoes, red onion, parsley, and crumbled feta.
  3. Prepare the Dressing: In a separate bowl, whisk together the olive oil, apple cider vinegar, garlic powder, salt, and pepper.
  4. Dress the Salad: Pour the dressing over the pasta mixture and gently toss everything together.
  5. Chill: Allow the salad to chill in the refrigerator for at least 30 minutes before serving.

Notes

Make-ahead for deeper flavors. Avoid overcooking pasta to prevent sogginess.
