Description

Ingredients

  • 6 large eggs
  • 0.5 cup full-fat Greek yogurt
  • 1 tablespoon baking powder
  • 0.25 cup melted butter or coconut oil
  • 0.25 teaspoon salt
  • 0.5 teaspoon xanthan gum or psyllium husk powder
  • 0.5 cup finely ground almond flour (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the eggs and Greek yogurt in a mixing bowl.
  3. Add the baking powder, salt, and xanthan gum; mix until smooth.
  4. Incorporate the melted butter or coconut oil into the batter.
  5. Fold in the almond flour, if using.
  6. Prepare your loaf pan by greasing it with butter or coconut oil.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 30-40 minutes until golden brown.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
