Description

Vibrant green cookies that are soft and chewy, perfect for celebrating St. Patrick’s Day with friends and family.

Ingredients

Scale
  • 1 box (15.25 oz) white cake mix (about 3 cups)
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/4 teaspoon Kelly green gel food coloring
  • 3 tablespoons granulated sugar
  • 6 tablespoons powdered sugar

Instructions

  1. In a large mixing bowl, combine the white cake mix, eggs, and vegetable oil. Stir with a spatula until a sticky dough forms.
  2. Introduce the Kelly green gel food coloring into the dough and blend until evenly distributed.
  3. Cover the bowl with plastic wrap and chill the dough in the refrigerator for 30 minutes.
  4. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Place the granulated sugar in one small bowl and the powdered sugar in another.
  6. Use a tablespoon-sized cookie scoop to portion out the dough and roll each scoop into a ball.
  7. Roll each dough ball in granulated sugar, followed by rolling in powdered sugar.
  8. Place the coated cookie dough balls on the prepared baking sheet, spacing them at least 2 inches apart. Bake for 9-12 minutes.
  9. Remove from the oven and let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chill the dough for thicker cookies and avoid flatness. Customize with chocolate chips or other colors of food coloring.
