Ingredients

- 4 soft flour or whole-wheat tortillas
- 8 oz cream cheese (or Greek yogurt for a lighter option)
- 1 cup bell peppers, sliced into thin strips
- 1 cup cucumbers, cut into matchsticks
- 1 cup shredded or julienned carrots
- 1 cup spinach or lettuce leaves
- Salt and pepper to taste
- Optional: herbs, garlic powder, hot sauce
Instructions
- Prep your ingredients: Wash and slice all vegetables as described.
- Mix the cream cheese with herbs, garlic powder, salt, and pepper until creamy.
- Lay a tortilla flat and spread a layer of cream cheese mixture, leaving space at the edges.
- Layer the vegetables across the center of the tortilla.
- Fold in the sides of the tortilla and roll tightly from the bottom to the top.
- Slice the roll into bite-sized pinwheels and arrange on a serving platter.
Notes
You can prepare these roll-ups a day in advance. Wrap tightly in plastic wrap and store in the refrigerator. Best served cold.
