Description

A vibrant and healthy snack featuring soft tortillas filled with fresh vegetables and a creamy herb-infused cheese spread.


Ingredients

  • 4 soft flour or whole-wheat tortillas
  • 8 oz cream cheese (or Greek yogurt for a lighter option)
  • 1 cup bell peppers, sliced into thin strips
  • 1 cup cucumbers, cut into matchsticks
  • 1 cup shredded or julienned carrots
  • 1 cup spinach or lettuce leaves
  • Salt and pepper to taste
  • Optional: herbs, garlic powder, hot sauce

Instructions

  1. Prep your ingredients: Wash and slice all vegetables as described.
  2. Mix the cream cheese with herbs, garlic powder, salt, and pepper until creamy.
  3. Lay a tortilla flat and spread a layer of cream cheese mixture, leaving space at the edges.
  4. Layer the vegetables across the center of the tortilla.
  5. Fold in the sides of the tortilla and roll tightly from the bottom to the top.
  6. Slice the roll into bite-sized pinwheels and arrange on a serving platter.

Notes

You can prepare these roll-ups a day in advance. Wrap tightly in plastic wrap and store in the refrigerator. Best served cold.
