Description

Delicious cheesy lasagna roll-ups filled with ricotta, mozzarella, spinach, and garlic, topped with a rich garlic butter sauce.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 1/4 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 1/4 cup fresh basil, chopped
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 6 tablespoons unsalted butter
  • 4 more cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup shredded mozzarella cheese (for topping)
  • 1/4 cup grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the lasagna noodles in salted water until al dente, about 8 to 10 minutes. Drain and lay flat on parchment paper to cool.
  3. In a large mixing bowl, combine ricotta, mozzarella, Parmesan, spinach, basil, eggs, garlic, salt, pepper, and optional red pepper flakes. Mix until creamy.
  4. In a saucepan, melt butter over medium heat, add minced garlic, and cook until fragrant. Stir in parsley, salt, and pepper.
  5. Spread filling on each noodle, roll tightly, and place seam-side down in a baking dish.
  6. Drizzle half of the garlic butter sauce over the roll-ups and sprinkle with mozzarella and Parmesan.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until golden.
  8. Serve with remaining garlic butter sauce drizzled on top.

Notes

You can make this dish in advance. Just prepare the filling and sauce ahead of time, assemble, refrigerate, and increase bake time when ready to cook.
