Description

Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip)
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped

Instructions

  1. Pat dry the steak bites with paper towels and season generously with salt and pepper on all sides.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Sear the steak bites in a single layer for 1-2 minutes without moving until they develop a golden-brown crust; flip and cook for another 1-2 minutes. Remove the steak and set aside.
  4. Lower the heat and add butter to the skillet, letting it melt before tossing in minced garlic. Cook for about 30 seconds until fragrant.
  5. Add the zucchini and cook for 3-5 minutes until tender but still crisp.
  6. Combine the steak bites back into the skillet, tossing with the zucchini and garlic butter for 1-2 minutes until heated through.
  7. Garnish with chopped parsley if desired and serve immediately.

Notes

For enhanced flavor, marinate the steak ahead of time. Avoid overcrowding the skillet for perfect searing.
