Description

Crispy, flavorful eggplant slices coated in a delicious garlic herb crust, perfect for appetizers, sides, or sandwiches.


Ingredients

  • 1 large eggplant
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplant into 1/2-inch thick slices.
  3. In a bowl, combine breadcrumbs, Parmesan cheese, minced garlic, oregano, basil, salt, and pepper.
  4. Brush each slice of eggplant with olive oil on both sides.
  5. Coat each slice in the breadcrumb mixture, pressing lightly to adhere.
  6. Place the coated slices on a baking sheet lined with parchment paper.
  7. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  8. Remove from the oven and let them cool slightly. Serve warm as appetizers, side dishes, or as unique sandwich toppings.

Notes

For a quicker method, you can air fry the slices at 375°F (190°C) for about 15-20 minutes, flipping halfway for a crunchier result.
