- 1 large eggplant
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Optional: fresh herbs for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the eggplant into 1/2-inch thick slices.
- In a bowl, combine breadcrumbs, Parmesan cheese, minced garlic, oregano, basil, salt, and pepper.
- Brush each slice of eggplant with olive oil on both sides.
- Coat each slice in the breadcrumb mixture, pressing lightly to adhere.
- Place the coated slices on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the oven and let them cool slightly. Serve warm as appetizers, side dishes, or as unique sandwich toppings.
Notes
For a quicker method, you can air fry the slices at 375°F (190°C) for about 15-20 minutes, flipping halfway for a crunchier result.
