Delicious quesadillas filled with grilled vegetables, mozzarella and feta cheese, perfect for summer gatherings.

- 4 large whole wheat tortillas
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 8 ounces of fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cloves garlic, minced
Instructions
- Preheat the grill to medium heat.
- In a large bowl, combine sliced zucchini, red bell pepper, and red onion. Drizzle with olive oil, and season with salt, pepper, oregano, and basil. Toss to coat.
- Place the seasoned vegetables on the grill. Grill for 5-7 minutes until tender with grill marks, then remove and set aside.
- In a skillet, heat a little olive oil and sauté the minced garlic until fragrant. Add fresh spinach and cook until wilted.
- Lay out tortillas and on half of each, layer grilled veggies, sautéed spinach, cherry tomatoes, feta, and mozzarella. Fold each tortilla in half.
- Grill the quesadillas for 3-4 minutes per side until golden brown and cheese is melted.
- Remove from the grill and let cool slightly before cutting into wedges. Serve warm.
Notes
Prep veggies and cheese in advance for a quicker meal. Customize fillings and serve with dips like guacamole or salsa.
