Description

A tropical delight with plump shrimp and juicy pineapple, perfectly grilled to capture the essence of summer.


Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 fresh pineapple, cut into chunks
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a mixing bowl, whisk together the olive oil, soy sauce, honey, minced garlic, grated ginger, salt, and pepper until well combined.
  3. Thread the shrimp and pineapple onto the skewers, alternating between them.
  4. Brush the skewers generously with the marinade.
  5. Grill the skewers for 2-3 minutes on each side until the shrimp turns opaque and reaches an internal temperature of 145°F.
  6. Remove the skewers from the grill and let them rest for a moment. Serve warm.

Notes

For a vegetarian option, substitute shrimp with chicken or firm tofu. Honey can be replaced with maple syrup for a vegan version.
