Description

A hearty and healthy alternative to traditional stuffed dishes, these zucchini boats are filled with ground beef, marinara sauce, and topped with melted cheese.


Ingredients

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C) while you prepare the zucchinis.
  2. Cut the zucchinis in half lengthwise and scoop out the seeds.
  3. Brown the ground beef in a skillet over medium heat with the chopped onion and minced garlic.
  4. Stir in the Italian seasoning, salt, and pepper, and add the marinara sauce.
  5. Fill each zucchini boat with the beef mixture.
  6. Top each boat with shredded cheese.
  7. Cover the dish with foil and bake for 25-30 minutes.
  8. Remove the foil and bake for an additional 5-10 minutes until the cheese is golden brown.
  9. Serve warm, garnished with fresh herbs if desired.

Notes

Use firm zucchinis for the best results. Prepare the filling ahead of time for convenience.
