Description

A delightful and comforting breakfast bowl filled with crispy hash browns, creamy scrambled eggs, and savory sausage, topped with fresh avocado and salsa.


Ingredients

  • 4 cups frozen shredded hash browns, thawed
  • 3 tablespoons vegetable oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 6 large eggs
  • ¼ cup whole milk
  • 7 ounces breakfast sausage, casings removed
  • 1 cup shredded cheddar cheese
  • ½ cup salsa (mild or spicy)
  • 1 avocado, diced
  • 2 green onions, sliced
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large nonstick skillet over medium-high heat.
  2. Add the thawed hash browns, sprinkle with salt and pepper, and cook undisturbed for 5-7 minutes.
  3. Flip the hash browns gently and cook for another 4-5 minutes until golden brown on both sides.
  4. Remove the hash browns and keep warm.
  5. Add remaining 1 tablespoon of oil and cook the sausage, breaking it apart until browned (about 6-8 minutes).
  6. In a mixing bowl, whisk together eggs, milk, salt, and pepper.
  7. Pour the egg mixture into the skillet and scramble gently until cooked but creamy.
  8. Divide hash browns into bowls, top with scrambled eggs, sausage, cheese, salsa, avocado, green onions, and cilantro.
  9. Serve immediately.

Notes

Customize your bowls by mixing in hot salsa or by using different types of cheese. Make-ahead tip: Prepare the hash browns ahead of time and store them in the refrigerator.
