- 4 cups frozen shredded hash browns, thawed
- 3 tablespoons vegetable oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 6 large eggs
- ¼ cup whole milk
- 7 ounces breakfast sausage, casings removed
- 1 cup shredded cheddar cheese
- ½ cup salsa (mild or spicy)
- 1 avocado, diced
- 2 green onions, sliced
- 2 tablespoons fresh cilantro, chopped (optional)
Instructions
- Heat 2 tablespoons of vegetable oil in a large nonstick skillet over medium-high heat.
- Add the thawed hash browns, sprinkle with salt and pepper, and cook undisturbed for 5-7 minutes.
- Flip the hash browns gently and cook for another 4-5 minutes until golden brown on both sides.
- Remove the hash browns and keep warm.
- Add remaining 1 tablespoon of oil and cook the sausage, breaking it apart until browned (about 6-8 minutes).
- In a mixing bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture into the skillet and scramble gently until cooked but creamy.
- Divide hash browns into bowls, top with scrambled eggs, sausage, cheese, salsa, avocado, green onions, and cilantro.
- Serve immediately.
