- 2 chicken breasts
- 1 cup pineapple juice
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon garlic powder
- 1 cup cooked rice
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic powder, salt, and pepper until well combined.
- Place the chicken breasts into the marinade, cover, and refrigerate for at least 30 minutes to allow flavors to penetrate.
- Preheat the grill or grill pan to medium heat and cook the marinated chicken for 6-7 minutes on each side until charred and cooked through (internal temperature of 165°F).
- In a sauté pan, heat oil over medium heat and sauté mixed vegetables for about 5 minutes until tender yet crunchy.
- Allow the chicken to rest, then slice it into strips.
- In a serving bowl, layer rice, sautéed vegetables, and chicken slices. Drizzle with remaining marinade and garnish with fresh cilantro. Serve warm.
