Description

A vibrant bowl filled with juicy grilled chicken marinated in pineapple juice and soy sauce, complemented by colorful mixed vegetables and fluffy rice.


Ingredients

  • 2 chicken breasts
  • 1 cup pineapple juice
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 cup cooked rice
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic powder, salt, and pepper until well combined.
  2. Place the chicken breasts into the marinade, cover, and refrigerate for at least 30 minutes to allow flavors to penetrate.
  3. Preheat the grill or grill pan to medium heat and cook the marinated chicken for 6-7 minutes on each side until charred and cooked through (internal temperature of 165°F).
  4. In a sauté pan, heat oil over medium heat and sauté mixed vegetables for about 5 minutes until tender yet crunchy.
  5. Allow the chicken to rest, then slice it into strips.
  6. In a serving bowl, layer rice, sautéed vegetables, and chicken slices. Drizzle with remaining marinade and garnish with fresh cilantro. Serve warm.

Notes
