- 2 medium zucchinis, grated
- 2 large eggs
- 1/4 cup oat flour (or almond flour)
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup plain Greek yogurt or cottage cheese
- 1 garlic clove, finely minced
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1/2 tsp dried oregano or thyme
- 2 tbsp chopped fresh parsley or dill
- 1 tbsp olive oil or olive oil spray for pan-frying
Instructions
- Grate the zucchini using a box grater or food processor. Squeeze out excess moisture with a cloth or paper towel.
- Mix the drained zucchini with eggs, oat flour, garlic, cheese (if using), herbs, salt, and pepper until combined.
- Heat a non-stick skillet over medium heat and drizzle with olive oil.
- Scoop about 1/4 cup of batter into the skillet, flattening it slightly.
- Cook each fritter for about 3-4 minutes per side until golden brown.
- Drain on paper towels and serve warm.
Notes
Pat the grated zucchini dry to avoid sogginess. Customize with other grated vegetables for added flavor.
