Description

Delightful breakfast muffins blending sweet pancake batter with savory sausage, eggs, and cheese.


Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 2 tbsp maple syrup
  • 6 cooked sausage patties (flattened)
  • 6 scrambled or fried eggs
  • 6 slices American cheese
  • Optional: Sharp cheddar cheese, turkey sausage, hot honey

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add milk, egg, melted butter, and maple syrup; mix gently until just combined.
  4. Cook the sausage patties in a skillet over medium heat for 3-4 minutes per side, then flatten slightly.
  5. Scramble or fry eggs to your preference.
  6. Spoon a layer of batter into each muffin cup. Add a sausage patty, eggs, and half a slice of cheese.
  7. Cover with additional batter, leaving space for rising.
  8. Bake for 18-20 minutes until golden brown and puffed.
  9. Let cool slightly before removing from the tin.

Notes

Muffins can be made ahead and stored in the fridge for up to two days or frozen for up to three months.
