- 8 slices of medium-thick ham
- 1 small onion, chopped
- ½ cup sliced mushrooms
- 1 cup cooked and drained spinach
- 250 g low-fat ricotta cheese
- 2 tablespoons low-fat white cheese or shredded cheese
- Salt and pepper to taste
- Vegetable spray for greasing
Instructions
- Prepare the filling: In a sauté pan, heat a little vegetable spray over medium heat. Add the finely chopped onion, allowing it to caramelize gently until golden. Stir in the sliced mushrooms, cooking until tender.
- Create the creamy base: In a large bowl, mix the ricotta and white cheese until smooth. Add the cooked spinach, incorporating it evenly. Season with salt and pepper.
- Assemble the cannelloni: Lay out ham slices and distribute the filling over each slice. Roll gently to secure the filling.
- Arrange in the baking dish: Spray a baking dish and place the ham-filled cannelloni snugly. Pour tomato sauce over and sprinkle with cheese.
- Bake: Preheat oven to 200°C (392°F) and bake for 15-20 minutes until golden and bubbly.
- Serve and enjoy: Plate hot, allowing flavors to mingle.
