Description

Delicious baked roll-ups filled with corned beef, sauerkraut, and Swiss cheese, perfect for a low-carb lifestyle.


Ingredients

  • 2 cups shredded Swiss cheese
  • 8 ounces sliced corned beef
  • 1 cup drained sauerkraut
  • 1/4 cup mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1 1/2 tablespoons sugar-free ketchup
  • 2 teaspoons Swerve confectioners sugar substitute
  • 1 tablespoon prepared horseradish sauce
  • 1 pinch paprika

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Portion the shredded Swiss cheese into 8 equal circles on a parchment-lined baking sheet.
  3. Bake for 6 to 8 minutes until the edges turn golden brown.
  4. While baking, mix mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, horseradish sauce, and paprika until well combined.
  5. Let cheese circles cool for about 1 minute.
  6. Assemble by placing corned beef and sauerkraut on each cheese circle, drizzle with sauce, and fold to create roll-ups.
  7. Let the roll-ups rest briefly before serving.
