- 2 large zucchinis, sliced
- 1 cup ricotta cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare your baking dish by lightly drizzling olive oil across the bottom.
- Layer half of the zucchini slices at the bottom of the dish, overlapping slightly.
- Spread half of the ricotta cheese over the zucchini, then season with salt, pepper, and half of the Italian seasoning.
- Spoon half of the marinara sauce over the ricotta layer.
- Repeat the layers with the remaining zucchini, ricotta, and marinara.
- Sprinkle the mozzarella cheese on top.
- Finish with the grated Parmesan cheese on top.
- Bake for 25-30 minutes.
- Allow it to cool for a few minutes before serving.
Notes
Can be assembled a day ahead of time. For extra crunch, try cooking it in an air fryer for 15-20 minutes.
