Description

A comforting dish featuring layers of tender zucchini, creamy ricotta, and savory marinara, baked to perfection.


Ingredients

Scale
  • 2 large zucchinis, sliced
  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your baking dish by lightly drizzling olive oil across the bottom.
  3. Layer half of the zucchini slices at the bottom of the dish, overlapping slightly.
  4. Spread half of the ricotta cheese over the zucchini, then season with salt, pepper, and half of the Italian seasoning.
  5. Spoon half of the marinara sauce over the ricotta layer.
  6. Repeat the layers with the remaining zucchini, ricotta, and marinara.
  7. Sprinkle the mozzarella cheese on top.
  8. Finish with the grated Parmesan cheese on top.
  9. Bake for 25-30 minutes.
  10. Allow it to cool for a few minutes before serving.

Notes

Can be assembled a day ahead of time. For extra crunch, try cooking it in an air fryer for 15-20 minutes.
