Description

Delightful protein bites featuring fresh blueberries and zesty lemon, perfect for a nutritious snack or post-workout treat.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/2 cup blueberries
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a mixing bowl, combine the cottage cheese, rolled oats, honey, lemon juice, lemon zest, vanilla extract, and salt. Stir until smooth.
  2. Gently fold in the blueberries without crushing them.
  3. Refrigerate the mixture for about 30 minutes.
  4. Scoop out tablespoon-sized portions and roll them into balls.
  5. Place the bites onto a lined baking sheet and freeze them for 1-2 hours, until firm.
  6. Transfer the bites to an airtight container and store in the fridge or freezer.

Notes

Chill mixing bowl and utensils for best results. Can be frozen for up to three months.
