Description

A delicious and healthy skillet meal featuring ground turkey and fresh zucchini, perfect for weeknight dinners.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchini, diced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the chopped onion for about 5 minutes until softened.
  3. Add the minced garlic and stir for another minute.
  4. Cook the ground turkey, breaking it up until browned, about 7-10 minutes.
  5. Incorporate the diced zucchini and undrained diced tomatoes, along with the Italian seasoning, salt, and pepper.
  6. Simmer the mixture for 10-15 minutes until the zucchini is tender.
  7. Garnish with grated Parmesan cheese if desired and serve warm.
