Description

A refreshing summer salad bursting with vibrant flavors from crisp cucumbers, juicy tomatoes, and sweet onions, all marinated in a tangy vinaigrette.

Ingredients

Scale
  • 2 cups cucumbers, sliced
  • 2 cups tomatoes, chopped
  • 1 cup onions, sliced
  • 1/4 cup olive oil
  • 1/4 cup vinegar (white or apple cider)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon sugar
  • 1 tablespoon fresh herbs (like dill or parsley), optional

Instructions

  1. In a large mixing bowl, combine the sliced cucumbers, chopped tomatoes, and sliced onions.
  2. In a separate bowl, whisk together the olive oil, vinegar, salt, pepper, and sugar until well combined.
  3. Pour the vinaigrette over the vegetables, tossing gently to ensure every piece is coated.
  4. Allow the mixture to marinate in the refrigerator for at least 30 minutes before serving.
  5. Taste the salad and adjust seasoning if necessary. Add fresh herbs just before serving.

Notes

For best flavor, allow the salad to marinate for a few hours or overnight. This dish also pairs well with grilled meats and can be made ahead.
