Description

A creamy and flavorful white bean and spinach skillet dish that’s perfect for weeknight dinners or entertaining guests.


Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups cooked white beans, drained and rinsed
  • 1/2 cup chicken broth
  • 4 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 1/4 cup heavy cream (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until softened, about 5 minutes.
  3. Stir in minced garlic and crushed red pepper flakes; cook for 1 minute until fragrant.
  4. Add white beans and chicken broth, bringing to a gentle simmer.
  5. Gradually stir in fresh spinach and cook until wilted, about 2 minutes.
  6. Pour in heavy cream (if using), add grated Parmesan cheese and lemon juice, stirring until combined.
  7. Season with salt and black pepper to taste and serve hot.

Notes

For a vegan option, substitute heavy cream with nutritional yeast and use vegetable broth.
