- 2 cups cooked white beans, drained and rinsed
- 1/2 cup chicken broth
- 4 cups fresh spinach
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh lemon juice
- 1/4 cup heavy cream (optional)
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until softened, about 5 minutes.
- Stir in minced garlic and crushed red pepper flakes; cook for 1 minute until fragrant.
- Add white beans and chicken broth, bringing to a gentle simmer.
- Gradually stir in fresh spinach and cook until wilted, about 2 minutes.
- Pour in heavy cream (if using), add grated Parmesan cheese and lemon juice, stirring until combined.
- Season with salt and black pepper to taste and serve hot.
Notes
For a vegan option, substitute heavy cream with nutritional yeast and use vegetable broth.
