Description

A delightful bake featuring chicken, zucchini, cherry tomatoes, and melty cheese with Mediterranean spices.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • ½ red onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 2 tablespoons dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease your baking dish with olive oil.
  3. Combine the chicken, zucchini, cherry tomatoes, red onion, and minced garlic in a mixing bowl.
  4. Drizzle with olive oil and sprinkle with seasonings; mix well.
  5. Spread the mixture evenly in the baking dish.
  6. Top with shredded mozzarella and grated Parmesan.
  7. Cover with foil and bake for 20 minutes.
  8. Uncover and bake for an additional 10-15 minutes until the cheese is golden brown.
  9. Garnish with fresh parsley before serving.
