Description

A refreshing and flavorful recipe combining grilled chicken with crisp vegetables, drizzled in a lemon-dill dressing.


Ingredients

  • 4 chicken breasts
  • 2 lemons
  • 3 tablespoons olive oil
  • 2 tablespoons fresh dill, chopped
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with olive oil, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side until fully cooked.
  4. In a small bowl, whisk together lemon juice, a tablespoon of olive oil, dill, salt, and pepper for the dressing.
  5. In a large bowl, combine grilled chicken, diced cucumber, bell pepper, and halved cherry tomatoes.
  6. Drizzle with the lemon-dill dressing and gently mix to combine.
